Growing up, everyone loved potatoes! This is a fun and healthy way to enjoy potato salad! Our recipe is dairy free, soy free, and oil free. We make everything from scratch, all the way down to the sauce! It is simple to make and full of complex carbohydrates, minerals and fiber!
Ingredients:
8 organic russet or red potatoes
1 cup of soaked, organic sunflower seeds
1 medium avocado
1 bunch of organic scallions/green onions
1/3 of a bunch of organic cilantro
8 key limes
7 ounces of water
sea salt/ Utah real salt to taste
red pepper flakes to taste
1 organic jalapeno
organic oregano to taste
dill to taste (optional)
Instructions:
Wash all of your vegetables.
Dice your potatoes into cubes and add them to a pot of hot water. Cook them until they're soft, but do not let them cook too long or they will break apart!
Once your potatoes are cooked, drain them, and let them cool down.
Chop the scallions, cilantro, onion and jalapeno then set them aside for when the sauce is ready.
Sauce:
In a blender, add 1 cup of sunflower seeds, an avocado, the key lime juice, 7 ounces of water, salt, oregano, and cilantro!
Blend them all together until it is very smooth! Taste the sauce and adjust the seasonings if needed.
Using a bowl, combine the potatoes, sauce and chopped veggies. Mix them carefully and thoroughly until they are well combined!
Let it cool for 10 minutes in the fridge and Bon Appetite!
